Preventing The Back To HomeSchool Meal Planning Madness

Hmmm… have you thought about what you’ll be feeding those hungry learners? If your kids were in public school you may not have had to think much about it before. If you plan to homeschool then you will be feeding them at least three meals a day and maybe a few snacks in between.

This can turn into a chaotic juggling act if you aren’t prepared. How do we prevent meal time chaos in our home? By meal planning. I even plan out snacks sometimes so I don’t forget to include them on my grocery list. Check out this link for some Healthy Snacks to Go.

It might seem like a lot of trouble but when you find a system that works for then it is so easy. It will actually save you time and money in the long run. This is also a helpful thing even if you don’t homeschool.

A Completely Honest Review Of Our First Hello Fresh Box!

We were so very excited to try out Hello Fresh. If you haven’t heard of them they offer a subscription plan where you choose your plan and your meals. They will deliver the meals, fresh from the farm to your home, and they provide a tracking service so you will know when to expect the package. You even have the option to skip a week or two, if needed.

You will need the basic kitchen utensils plus a few things like, butter, olive oil, salt and pepper, and sugar. Other than those ingredients they pretty much provide everything right in the cute little bags they deliver.

Oven Roasted Brussels Sprouts

Here is a super easy way to make Brussels Sprouts. I used some of the Brussels Sprouts I got with my order from Southwestern Produce a couple of weeks ago.

I’ll be trying out some different recipes as I really haven’t made Brussels Sprouts, unless it was the microwave bags, a whole lot. These were pretty good though.

This recipe can actually be adapted to almost any kind of raw/frozen veggies.

Oven Roasted Brussels Sprouts

Ingredients:

  • 1 lb of Brussels sprouts
  • 2 – 3 T. Olive oil (I may have used a tad bit more as I love olive oil)
  • Garlic salt (I like Lawry’s)
  • Pepper to taste
  • Parmesan cheese, optional

Directions:

Preheat oven to 400.

Grease a large baking pan.

Wash your veggies and cut in half if they are large.

Place veggies in a large bowl.

Drizzle with oil.

Sprinkle with salt and pepper.

Toss to coat.

Pour onto baking pan.

Bake 10-15 minutes, turn.

Bake another 10-15 minutes until slightly browned.

Sprinkle with Parmesan cheese, if desired.

Easy Pork Chops w/Rice

This recipe is one of those super easy simple recipes. You could also substitute white rice or even wild rice if you like.

Easy Pork Chops w/Rice

Ingredients:

  • 6-8 Pork Chops
  • 1 1/2 c. Yellow rice
  • 1 can cream of mushroom soup
  • 3 c. Water
  • Garlic salt (I like Lawry’s)
  • Black pepper, to taste

Directions:

Preheat oven to 350.

Grease a 9 x 13 pan.

Season the chops as desired.

Pan sear the pork chops, if desired.

Mix together the rice, soup, and water.

Pour the rice mixture into then pan.

Layer the pork chops on top.

Cover with foil.

Bake for 1 – 1 1-2 hours.

Uncover and bake an additional 20 – 30 minutes.

Let sit 5 – 10 minutes.

Cheesy Breakfast Croissants

This is yet another meal I’ve made out of some clearance items from the deli. You could use biscuits or toast in place of the Croissants too.

I was lucky to grab one for myself before the kids devoured the double batch I made!

Cheesy Breakfast Croissants

Ingredients:

  • 6 ct. large Croissants (you could use the minis if you prefer)
  • 6 slices of your favorite cheese
  • 6 servings of your favorite breakfast meat (ham, sausage, bacon, etc)
  • 6 eggs cooked the way you like them.
  • Butter, melted (optional)

Directions:

Slice the Croissants in half so you have a top and bottom.

Layer with your cheese, meat, and eggs.

Place the top on the croissant.

You can enjoy this as it is or you can warm it slightly in the microwave, toaster oven, or oven.

You can also brush with butter before warming the croissant if you desire.

Enjoy!

I have started trying to do easier meals on days that I have square dancing obligations. This helps me to be able to put a nice meal on the table without feeling guilty about having some much needed ‘Mommy Time’. Some of these meals may also help with those that have busy or irregular schedules due to work or extracurricular activities.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

This helps me to be able to put a nice meal on the table without feeling guilty about having some much needed ‘Mommy Time’. Some of these meals may also help with those that have busy or irregular schedules due to work or extracurricular activities.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

I almost didn’t get this out today. I had been working on it and procrastinating a bit. I planned on finishing this up yesterday but after I mowed during the kids quiet time I really didn’t feel like doing much of anything for the rest of the day. After dinner I went to sit down for a minute and was out until late last night. But here it is, I hope you all enjoy and have a blessed, safe, and happy Independence Day celebration!

Crunchy Chicken

This recipe is so easy to make and so good to eat!

Ingredients:

  • 1 1/3 cups French-fried onions, crushed
  • 1/4 c. mayo
  • 1 lb skinless, boneless chicken breast halves or tenders

Directions:

Preheat oven to 400.

Grease a baking sheet.

Spread crushed onions in a shallow bowl or pie plate.

Coat each piece of chicken with mayo and then press into crushed onions.

Gently tap chicken to let loose pieces fall away.

Place the breaded chicken on a baking sheet.

Bake chicken until no longer pink in the center and the juices run clear, about 20 – 25 minutes.

Bacon-Wrapped Pork Tenderloin

Bacon-Wrapped Pork Tenderloin

Ingredients:

  • 3 lb pork tenderloin
  • 1t. salt
  • 1 t.  black pepper
  • 8 – 10 slices bacon

Directions:

Preheat oven to 350.

Rub the salt and pepper into all sides of the pork loin.

Wrap the loin with bacon in a spiral pattern. You can try to overlap the pieces in a spiral pattern or use toothpicks to secure.

Heat a large skillet over medium-high heat until hot.

Lightly brown all sides of the pork loin.

Transfer to the oven and bake for 25 to 30 minutes or until is cooked through.
