Hey everybody… it feels like its been FOREVER since I’ve posted. I have really missed you all… that might sound funny but I love seeing the notifications from readers and reading the comments that others leave… it makes me feel like maybe, just maybe I am helping someone in some way.
I think my last post was on January 30th! I had written a little bit about this pregnancy and some of the surprises, stresses, and worries it has brought with it. We are so blessed to have this little one in our lives and we just can’t wait to meet her!
I also told about some of the unexpected events that had transpired with our new house which we still haven’t officially moved into completely yet although I might spend more time there than I do here right now.
Someone did end up coming out to fix the electrical and plumbing issues but yesterday when I went to use the dishwasher it wouldn’t work… HMMMM???!!! The girls were not thrilled when I told them this news today… lol. I told them we now have a very expensive new dish drying rack!
January was full of ups and downs with the house, an ultrasound, and some other family activities that I wrote about HERE. I stayed pretty busy and tried to get things a little bit more organized… you can read about that in this post… the time spent on getting organized has paid off in some ways as I couldn’t have seen the newest issues that were yet to come.
Our homeschool adventures have been on hold for a couple of weeks as we’ve been focusing on getting the house ready to move in and I’ve been dealing with some new pregnancy-related? health issues.
So where to begin? That’s a good question because SO MUCH has happened. February was such a blur that I can’t even believe it has come and gone already! Continue reading “Life Update: We’re Still Here!”
I don’t know if Santa will be visiting your house anytime soon but I think he just might stop here for a handful of cookies. My kiddos love the tradition of leaving cookies for Santa although I suspect that it may be because they get to help sample the cookies.
This year I was determined to have a little bit less stress around the holidays but sometimes life seems to just happen around you. Our new house has been one thing after another and I really wasn’t sure just what else might happen before Christmas so I really tried to get things prepped ahead of time.
One thing I did was to make a TON of freezer meals, 35+ Freezer Meals In One Day!, and I also worked on adding printable recipes to all of my existing recipes on the blog as well as to the new recipes I’ve been posting. I’ve also gotten all of my recipes from my recipe box scheduled to post and I will continue to work on some of the others I have scattered around and packed up just as soon as I can.
This is so much easier than trying to keep your screen open in the kitchen… I apologize that I didn’t do this earlier! I also went ahead and made a bunch of Freezer Cookies! (Working on that post too!)
I’m not completely against using store-bought cookie dough but I feel that homemade is ALWAYS better if you can. With these recipes, you CAN! I normally like to roll most of my cookie dough into small balls and flash freeze to make it easier to only pull out what I need. You may want to experiment with these recipes or divide them into smaller batches before freezing. Check out this article HERE for more information about freezing different kinds of cookie dough!

I want to thank everyone who said a little prayer and kept my daughter and son-in-law in their thoughts this past week as they were traveling across the country to their new home… at least it will be for the next couple of years until they are stationed elsewhere. I miss them so much already but I am so happy to report that they made it safely with almost everything they had tied on the back of their truck… the vacuum cleaner was not so fortunate. They are working on getting settled in and preparing to have their first Christmas away from family… I am so proud but it makes me sad too! I had to do my grocery shopping this past weekend and our internet was DOWN! This meant that I needed to physically go into the store and push the buggy down the aisles… pure TORTURE, right? Well, maybe it doesn’t seem that bad but I have been spoiled by the Walmart Grocery Pickup.
I did survive and I posted a picture of my overflowing buggy on my Instagram that evening and had a contest for the person who could most closely guess how much I spent. The winner will be receiving a Walmart eGift card for $10.00! Continue reading “35+ Freezer Meals In One Day!”
Oh my goodness, what a day I’ve had and it isn’t even been lunchtime yet. I actually went to bed early last night as I was just so exhausted. Mr. Awesome had a meeting and wouldn’t be home until late so I made the most of the evening.
The kids helped me make Chili Dog Casserole for dinner. We made it a little bit different as we just put the hotdogs into hotdog buns, instead of tortillas, and then spread the chili sauce on top and sprinkled with cheese before baking.
Mr. Awesome is not crazy about the tortilla version so we decided to give it a try this way and it was a WINNER! Continue reading “Oh, What a day! Freezer meals, Pinterest Suspension, and No Toilet Paper”
I know it’s the middle of summer but I just found this great program that I had to share! I’m always looking for ways to cut back on the craziness around here and I am a big supporter of meal planning. (I do apologize for dropping the ball lately on getting those posted but I promise you I have a very good reason which I’ll share soon!) The one thing I need to incorporate more into my meal planning is freezer cooking. Continue reading “100 Days of Summer Freezer Meals – the series!”
Hey, y’all its been a few days since I’ve checked in with you. I hope everyone is doing well. We are finally getting over these colds that have been passed around and around and around… you get the point. Continue reading “Freezer Cooking Made Me Cry Yesterday”
This is one of our favorite go-to recipes when we go camping. I love to make these ahead of time in foil pans with covers. They can be easily reheated over the campfire or in an oven if you aren’t roughing it.
These are always a hit when I take them to covered dishes and other get-togethers as well. I thought I had posted the recipe before but I can’t seem to find it so here it is again. You could probably use some other small roll if you can find the sweet rolls.
These do well as a freezer meal but I don’t put the butter sauce on them before I freeze them. I usually wait until time to bake and then whip it up real quick. Continue reading “Ham and Cheese Sliders on Sweet Rolls”
I remember learning to make these when I was really young. My first experience baking them was in a wood stove! While I’m thankful for modern conveniences nothing compares to the taste of those first biscuits I made.
A lot of people shy away from making biscuits from scratch but they are really quite simple. The unbaked biscuits also freeze well for later use! Continue reading “Buttermilk Biscuits”
This is one of those super simple meals. The base recipe can be used in a variety of ways to make different meals. This would also work as a freezer meal! Continue reading “Easy Crockpot Salsa Chicken”
This is one of those meals that is so easy to make and so good to eat. This is also a good one for the freezer! Continue reading “Crockpot Italian Chicken”
