May 14 – May 20, 2017 Meal Plan

This is our basic meal plan for the week. Sometimes we will switch the days around if I forgot to set something out or put something in the crock pot. Please feel free to use this or change it around to suit your family’s needs.

Cole Slaw

This is as close as I can get to my exact recipe. I just kinda eyeball my ingredients as I pour, dump, and taste. I like mine a little sweet but with a little tang to it also. You can adjust the sugar and vinegar to suit your own taste.

  • 1(16 oz) bag coleslaw mix (or use 2-3 c. shredded cabbage and 1 shredded carrot)
  • 1/2 c mayo
  • 2-3 T sugar, depending on taste (I have been using Stevia in place of the sugar)
  • 1- 2 T vinegar, depending on taste (Try apple cider vinegar for a different flavor)
  • salt and pepper to taste (we like to use mineral salt or Lawry’s garlic salt)

Mix everything, except the coleslaw mix, to make the dressing. Add the mix and stir/toss to coat evenly. This usually tastes best if made in advance and allowed to sit in the fridge for an hour or so.
