Cinnamon Roll Pancakes

This recipe came about after I found a recipe in my FaceBook feed for Cinnamon Roll Pancakes. After reading through the recipe I decided I wanted to try something different. So after looking at a few different ideas. playing with the batter and filling, and lots of taste testing this was the winner here.

Cinnamon Roll Pancakes

Ingredients:

Filling:
  • 1/4 c. butter or margarine, softened but not melted
  • 1/4 c. brown sugar
  • 1 1/2 t. cinnamon
Glaze:
  • 1/4 c. butter or margarine
  • 2 oz. cream cheese
  • 1 c. powdered sugar
  • 1 t. vanilla
Pancakes:
  • 1 batch Pancakes or use a prepackaged mix
  • 1 t. vanilla (optional)

Directions:

Filling:

Mix all of the filling ingredients together. Put into a ziploc bag or a pastry bag and place in the refrigerator to chill.

Glaze:

Place the butter and cream cheese in a bowl and microwave for 1 minute on 50%. Stir and microwave again until melted. Add the remaining ingredients and stir until smooth. Put into a ziploc bag or pastry bag and place in the refrigerator to chill.

Pancakes:

Mix up the pancake batter according to the directions and add the vanilla.

Get out the filling  and glaze bags and snip a corner or an end off of each bag. (You may want to have a small plate or bowl to place the bags on/in as the filling and icing may ooze out.)

Heat your pan or griddle over medium high heat and spray with cooking spray. Begin by making basic pancakes. When you flip them over then make a swirl on the tops with the filling. (I snipped a little too much and had a thick line, but no one complained.)

 

The filling will melt into the pancake as the other side browns. Once cooked place the pancake on a plate and drizzle with the glaze.(Again, the more you snip the thicker your lines will be.)

Serve HOT!

January 29-February 4, 2017 Meal Plan

This is our basic meal plan for the week. Sometimes we will switch the days around if I forgot to set something out or put something in the crock pot. Please feel free to use this or change it around to suit your family’s needs.

I do have ‘Snacks/Desserts’ listed as well. I always try to keep a bowl of fresh fruit out on the counter or table for the kids to snack on. Sometimes I will make a special snack or treat for us to enjoy.

This week I have a couple of new/old and forgotten recipes to try. I will mark them with a ** so you will know which ones they are.

Sunday

Breakfast:

Eggs w/Creamy Bacon Grits, Toast

Lunch:

leftovers

Dinner:

Black Bean Soup, Rice, Cheddar Muffins

Snacks/Desserts:

** Easy Apple Dumplings (this is one we haven’t had in awhile)


Monday

Breakfast:

Cereal/Oatmeal

Lunch:

PB & J sandwiches, fresh fruit

Dinner:

Chicken & Cheese Enchiladas, Spanish Rice, Beans

Snacks/Desserts:

Popcorn


Tuesday

Breakfast:

French Toast

Lunch:

Egg salad sandwiches, veggies

Dinner:

Breakfast for Dinner (Backwards Day)

Snacks/Desserts:

** Lazy Dazy Cookie Cake (this is one we haven’t had in awhile)


Wednesday

Breakfast:

Muffins

Lunch:

Grilled cheese, fresh fruit or veggies

Dinner:

** Spicy Chicken Breast Caprese w/pasta, Salad (this is one we haven’t had in awhile)

Snacks/Desserts:

Muffins


Thursday

Breakfast:

** Cinnamon Roll Pancakes (NEW)

Lunch:

Chicken Salad, sliced tomatoes & cucumbers, lettuce

Dinner:

** Crockpot Taco Soup, Rice, Tortilla Chips (this is one we haven’t had in awhile)

Snacks/Desserts:

Fruit/Veggies


Friday

Breakfast:

Cereal/Oatmeal

Lunch:

PB & J sandwiches, fresh fruit

Dinner:

** Gorgonzola Pasta w/Mushrooms, Salad, Cheesy Garlic Bread Sticks  (this is one we haven’t had in awhile)

Snacks/Desserts:

** Fried Apple Pies  (this is one we haven’t had in awhile)


Saturday

Breakfast:

PB & Banana Toast, scrambled eggs

Lunch:

Tuna salad sandwiches, fresh veggies

Dinner:

** Easy Chicken Casserole, Mashed Potatoes, veggies (this is one we haven’t had in awhile)

Snacks/Desserts:

Boiled Eggs
