Chicken Sheet Pan Dinner

The other day I made a quick errand run to Sam’s Club to pickup up a few essentials and grab something for my sister-in-law to be. The kids and I then met up with her and exchanged her items and I got a camera that my brother no longer needed… yippee! Y’all know I have been talking about getting a new camera… new-to-me is new enough!

This actually happens to be the same camera that was used at my daughter’s wedding so I know how well it works and I’m excited to play with it and start taking some awesome photos!

By the time I got home, I was so ready for a nap and EVERYONE was starving. I decided to make a quick sheet pan dinner with some Super Yummy Caulitaters. This meal was so simple!

This particular day I also made a simple cheese sauce to go with it as Mr. Awesome can’t have broccoli without the cheese.

I should have doubled the recipe as EVERYONE DEVOURED it.

Eureka! I Found My Belt And A Lot Of Gold!

Oh my! What a day we have had. As you know from yesterday’s post I was feeling a bit overwhelmed before we even made it to our dance… I finally found that missing belt though and you’ll never guess where. If it had been a snake it would have bit me… it really would have.

See it now? I have no idea how it got there even though I am quite sure I must’ve done it before I put away my crinoline. I’ve never done this before so I’m really quite puzzled as to why I did that but it is safe and sound where it belongs now.

Crazy thing is I didn’t really even need it last night as it wasn’t quite the right shade… sigh. Here’s a quick pic of my outfit… I was hoping to get a better pic last night but that never happened either.

Chicken Cordon Casserole

This is one of those recipes that takes me a little bit longer to put together so we don’t have it as often as some of the other recipes. It is also a bit more expensive to make so it is a treat when we do have it.

Chicken Cordon Casserole

Ingredients:

  • 4-5 boneless, skinless chicken breasts, thinly sliced
  • 10 – 12  slices of ham
  • 10 – 12 slices of Swiss cheese
  • 1 t. black pepper
  • 1t. salt
  • 1/2 c. butter or margarine
  • 1/2 c. flour
  • 1 c. chicken broth
  • 3 T. Dijon Mustard
  • 2 c. crackers, crushed
  • 1/3 c. Parmesan cheese, grated
  • 1 T. garlic powder
  • 1 T. onion powder
  • 1 T. parsley
  • 1/3 c. butter or margarine, melted

Directions:

Preheat your oven to 350.

Grease a 9 x 13 casserole dish.

In a medium saucepan over medium heat, melt the butter or margarine and whisk in the flour until well combined.

Slowly add the chicken broth making sure to stir well.

When the sauce starts to thicken add the mustard, salt, and pepper.  Stir and remove from heat.

Mix the Parmesan cheese, crackers, garlic powder, onion powder, and parsley. Set to the side.

Pour a small amount of the sauce on the bottom of the pan.

Place the chicken in the bottom of the pan and season with salt and pepper, as desired.

Drizzle the chicken with the sauce.

Place the ham slices in a layer over the chicken.

Then layer the Swiss cheese.

Spread the sauce over the cheese.

Sprinkle on the cracker and cheese mixture.

Drizzle with melted butter.

Bake for 40 – 45 minutes, until the chicken is cooked and the topping has browned.

 

Crunchy Chicken

This recipe is so easy to make and so good to eat!

Ingredients:

  • 1 1/3 cups French-fried onions or pork rinds, crushed
  • 1/4 c. mayo
  • 1 lb skinless, boneless chicken breast halves or tenders

Directions:

Preheat oven to 400.

Grease a baking sheet.

Spread crushed onions in a shallow bowl or pie plate.

Coat each piece of chicken with mayo and then press into crushed onions.

Gently tap chicken to let loose pieces fall away.

Place the breaded chicken on a baking sheet.

Bake chicken until no longer pink in the center and the juices run clear, about 20 – 25 minutes.

Thanksgiving in a Crockpot

This meal is so delicious and so easy to fix.

Thanksgiving in a Crockpot

Ingredients:

•8 chicken breasts
•16-20 oz package of frozen mixed vegetables
•2 cans cream of chicken soup
•2 – 6 0z box stuffing, prepared to package directions
•salt and pepper, to taste

Directions:

I like to spray my crockpot with nonstick spray first.

Dump mixed veggies in the bottom of crockpot.

Add your chicken breast, frozen or thawed.

Pour the soup over top the chicken.

Cover with the prepared stuffing.

Cook on low 6-8 hours or high 3-4 hours.

Add salt and pepper to taste.

Oven BBQ Chicken

This is another fairly simple chicken recipe that I make from time to time.

Ingredients:

  • 2-3 lbs chicken (can be legs, thighs, breasts, boneless or bone in, skin on or skinless — just note that bone in chicken will take longer to cook.)
  • melted butter or olive oil
  • salt and pepper, to taste
  • bottle of your favorite BBQ sauce

Directions:

Preheat oven to 450.

Grease a large baking dish. I like to line mine with foil and spray it with nonstick cooking spray to make for easier clean up.

Wash and trim the chicken. Pat dry with a paper towel.

Coat the chicken with melted butter or olive oil. Place in the pan.

Season with salt and pepper.

Bake for 15 minutes at 450 to get a good browning on the chicken.

Reduce heat to 350 and cook another 15-45 minutes until the juices run clear.

About 15-20 minutes before finished cooking pour the BBQ sauce over the chicken and continue baking.

Remove from oven and let sit 5-10 minutes before serving.

Easy Baked Chicken

This is one of those simple dishes that reminds me of growing up. I think everyone should learn to make this dish so you can have it to fall back on for those days that you just don’t feel like doing anything challenging.

I usually pair this with some mashed potatoes and a veggie on the side. I will also include the instructions for turning this into Oven BBQ chicken after the recipe.

Baked Chicken

Ingredients:

  • 2-3 lbs chicken (can be legs, thighs, breasts, boneless or bone in, skin on or skinless — just note that bone in chicken will take longer to cook.)
  • melted butter or olive oil
  • salt and pepper
  • favorite seasoning: lemon pepper, creole, etc. (optional)

Directions:

Preheat oven to 450.

Grease a large baking dish. I like to line mine with foil and spray it with nonstick cooking spray to make for easier clean up.

Wash and trim the chicken. Pat dry with a paper towel.

Coat the chicken with melted butter or olive oil. Place in the pan.

Season with salt and pepper. Sprinkle on your favorite seasoning as well, if desired.

Bake for 15 minutes at 450 to get a good browning on the chicken.

Reduce heat to 350 and cook another 15-45 minutes until the juices run clear.

Remove from oven and let sit 5-10 minutes before serving.

You can use the drippings to make Chicken Gravy which is delicious over mashed potatoes.

Ingredients:

  • 2 c. flour
  • 1 c. buttermilk, or regular milk
  • 2 quarts chicken broth
  • 3 c. cooked chicken, shredded
  • 1 bag of mixed veggies
  • salt and pepper to taste

Directions:

In a bowl, combine the flour and milk. Mix with a fork until the dough forms a ball.

Flour a work surface. Roll the dough out thin with a heavily floured rolling pin.

Use a pizza cutter or knife to cut the dumplings in squares about 2×2.

Use a spatula to put them onto a floured plate.

Bring the broth to a boil. Drop the dumplings in one at a time, stirring while you add them.

Cook them for about 15-20 minutes. Add the cooked chicken and veggies to the pot.

Crockpot Chicken Marinara w/Veggies

Crockpot Chicken Marinara w/Veggies

Ingredients:

  • 4 lbs boneless skinless chicken breasts or thighs
  • 6 cloves garlic, pressed
  • 2 (12-ounce) cans crushed tomatoes
  • 6 stalks celery, diced
  • 2 small zucchini, diced
  • 2 bell peppers, diced
  • 1 c. sliced mushrooms
  • 1 jar spaghetti sauce
  • 1 T. Italian seasoning
  • salt and pepper, to taste

Directions:

Place the first 7 ingredients in a crockpot. Pour sauce on top and sprinkle with seasonings, stir to blend ingredients.

Cover and cook on low for 6 to 7 hours.

Remove the chicken and shred. Return back to crock pot and stir into sauce.

Serve over cooked noodles.

BBQ Chicken and Pasta Bake

My kids really love this dish. It seems to take a bit longer to make so I only make it every 3-4 months.

BBQ Chicken and Pasta Bake

Ingredients:

  • 2-3 lbs boneless, skinless chicken breasts
  • 1 bottle barbecue sauce
  • 1/2 to 1 can Coca Cola
  • salt and pepper, to taste
  • 1 box pasta (bowtie, penne, rotini)
  • 1/4 c. stick butter or margarine
  • 1/4 cup flour
  • 3 c. milk
  • 1 c. Parmesan Cheese
  • 2-3 c. cheddar cheese
  • 1 block of cream cheese, cubed
  • 8-10 slices Swiss cheese
  • 10-12 slices bacon, cooked crisp and crumbled

Directions:

Preheat the oven to 350.

Grease a 9×13 baking pan. (You will need a second pan to assemble the dish in.)

Sprinkle the chicken breasts with salt and pepper. Place in baking dish.

Pour 1/2 can of Coca Cola over the chicken, use the other half if you have room without over flowing.

Pour the BBQ sauce over the chicken.

Bake for 45 minutes to 1 hour, until cooked through. Remove from oven and set aside to cool.

Shred chicken and add back to the sauce.

**Cheese Sauce:

Melt the butter in a small saucepan. Add the flour and whisk together. Whisk in the milk and cook until slightly thickened.

Add the cheeses, reserving 1-2 cups of the cheddar for the top,  and cook until melted and creamy.

Cook the pasta according to the directions for ‘al dente’. Drain and add to the cheese sauce.

Spoon a layer of of pasta and sauce into a greased 9×13 pan. Top with a layer of chicken and sauce. Repeat, ending with a layer of chicken.

Spoon some of the BBQ sauce from the chicken over the layers.

Layer Swiss cheese slices over the last chicken layer.

Sprinkle with bacon crumbles and remaining cheddar cheese.

Bake about 30 – 45 minutes at 350.

**Note: The chicken could be cooked in the crockpot also. Just place the chicken, cola, and bbq sauce in a crockpot on low 6-7 hours or on high 3-4 hours.

Slow Cooker Honey Sesame Chicken

This is an easy alternative to takeout. You could also pair this with Chinese Fried Rice with Veggies to make a complete meal.

Slow Cooker Honey Sesame Chicken

Ingredients:

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into bite size chunks
  • 1/3 c. chicken broth
  • 1 c. honey
  • 1/2 c.soy sauce
  • 2 T. sesame oil (use canola if you don’t have sesame)
  • 1/4 cup ketchup
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1/4 t. red pepper flakes (optional)
  • 1/2 t. ground ginger (optional)
  • 1/4 c. cornstarch dissolved in 1/2 c. water
  • Sesame seeds

Directions:

Place chicken into crockpot.

Mix together the chicken broth through the red pepper flakes. Pour over the chicken.

Cook on low for 3-4 hours or on high 2– 3 hours, until chicken is cooked through.

Remove the chicken pieces from crock pot.

Stir the cornstarch/water mixture into the sauce. Cover with lid and cook 10-15 minutes until slightly thickened.Stir to combine with sauce.

Add the chicken to the sauce and stir. Sprinkle with Sesame seeds before serving.
