Do you ever feel like you have a dark cloud over you that you just can’t shake? Well, it’s been that way for a bit here. We’ve had more downs than ups but I know that it won’t last forever.

A few months back I mentioned that we had tried to get a house and it just didn’t work out. We haven’t given up but things have been quite a bit tougher than we ever imagined during this process and honestly, I’m about to lose my ever-lovin’ mind with paperwork on top of paperwork. (I’ve been hinting about a big surprise and was hoping to have some major housing updates by now but so far NADA.)

This quaint little cabin has some major issues and we have been working on them a little at a time but sometimes I just wanna throw my hands up in the air and quit. Seriously, it’s hard living in 600 square feet with 7 people and a doggie. I do love this little cabin and its location but in all honesty, it’s not been an easy transition for me. Life Without Plastic Back To School Essentials

Where has the summer gone? It’s so hard to believe that many kids will be headed back to school soon. I know we’ve been plugging along with our schooling here… slowly but surely we are getting through our On The Banks Of Plum Creek Academic Adventure as we’ve had some unexpected chaos come up this summer… more about that soon.

Many kids will be needed packed lunches for one reason or another and as you know we did the Plastic Free Challenge last month and we did really well with even though I didn’t get to post a lot about it. Just because July is over it doesn’t mean we shouldn’t try to stop using so many one time use plastics. I remember the lunch packing days with the plastic sandwich bags and all but over at Life Without Plastic they have all kinds of plastic-free alternatives for lunches. Why not check them out and see if you find anything that interests you? Change starts with one thing at a time and I know in our house I have been slowly replacing plastic items with more durable glass and/or metal items.

I admit that I’ve about used up all the freezer meals I made a few months ago and this series is just the motivation I needed to get myself back on track. Things have been so crazy here lately and it seems that if something can go wrong it will and has… just last week the dryer conked out on us so we’ve been air drying everything. We haven’t put up a clothesline so I’ve been using a couple of portable clothes drying racks set up on the porch. Well, of course, it has been very humid and we’ve had thunderstorms almost every day which has made this chore a little bit more difficult than it should be… that’s life though!

Wildcraft! An Herbal Adventure Game

Just in case you haven’t read about the Wildcraft game or the Learning Herbs books in any of my previous posts I’m going to share this with you now. My kids have absolutely been loving the Herb Studies we’ve incorporated into our Kirby’s Kids Academic Adventures. Recently I came across the Herb Fairies book series that they are enjoying as well. When I purchased the book series Amazon had recommended this game, Wildcraft! An Herbal Adventure Game, as others had also purchased it. I did buy the game and my kids love it!

Chicken Bacon Avocado Wraps

These things are amazing and good for you too! You could add a variety of other things to them but they are so easy and simple to make I’m sure they’ll be added to our menu plans on a regular basis. This recipe is for one to two people but can easily be doubled or tripled to fit your family.

You can prep a lot of these ahead of time to make these super easy to throw together. These also work great for any meal or as a quick snack when you need a little boost.

Chicken Bacon Avocado Wraps

Ingredients:

  • 4-6 oz cooked and seasoned chicken breast or canned chicken
  • 1/2 avocado, sliced thin
  • 1/2 tomato, sliced thin
  • 1-2 slices bacon, cooked crisp
  • lettuce, sliced thin
  • mayo, sour cream, or salad dressing of choice
  • 2-4 tortillas, flatbread, or Wonder Wraps p. 204 Trim Healthy Mama Cookbook

Directions:

Spread a thin layer of mayo or sour cream on your wrap. Add the remaining ingredients as desired. Fold and enjoy!

Kick The Summer Blues With Some Learning Adventures

Are your kids complaining that they are bored yet? Well, mine pretty much know better than to tell me they are bored because Momma will find lots for them to do like cleaning out the van or the stinky trash can… lol. We have some fun things also like working on our Kirby’s Kids Academic Adventures.

My kids also love doing unit studies as they love learning. Whether they are asking about the stripes on tigers or how a robot works I can usually find a unit study for over at UnitStudy.com. Right now they have a few special going on that you might want to check out for your kiddos or grandkids to help keep their brains from turning to mush over the summer vacation.

Homemade Grain-free Pizza

As many of you know I’ve been on this Trim Healthy Momma kick for a bit now. While I admit that there are some foods that I do miss on occasion, I am feeling so much better in so many ways that I will never go back to the way of eating that I had done before.

One of the things that I’ve missed out on was pizza which I have bought a few times for the kids but I usually just have something else instead. I know you can take the toppings off and eat them on or along with a salad but the bread is what I like the most… I know I’m weird.

I have been working on cleaning out my emails this week and ran across one from Katie over at Kids Cook Real Food. She had a video of her kids making this Grain-Free Pizza recipe which I think will work with my new way of eating and I’m so excited to give it a try. She said her kids made it so hopefully, it won’t be that hard for me to duplicate and I know my kids will love making it as well. They’ve been begging for a homemade pizza night as we haven’t had one in a while.

Celebrate National Anti-Boredom Month with help from Samko & Miko!

Did you know that July is National Anti-Boredom Month?

I didn’t know this until a few days ago as I saw it mentioned in an article as I was skimming through my facebook at a super fast rate. Then I was reminded of it again yesterday when going through my numerous emails…  the number of emails I get is crazy!

I can see why this would be a great month for finding ways to beat boredom as I’m sure there are a lot of parents hearing those famous words “I’m so bored…. there’s nothing to do!”. My eyes seem to do an automatic eye roll when I hear it from my kiddos. There’s always something you can do, right?
