We ran out of mayonnaise today but I’ve already placed an order for some more… Sam’s was out of our usual super sized containers though.
The delivery hadn’t arrived and we found ourselves down to the last little bit which wasn’t quite enough to finish up a batch of potato salad that I needed to make.
I’ve been meaning to try making my own but I felt a wee bit intimidated by some of the recipes I’d found before. I found a new recipe today and y’all… it was so EASY!!!
It took a cold egg, a cold cup of oil (I put mine in the freezer for a quick minute), a little vinegar (I may use some lemon juice the next time), some salt, and some Dijon mustard which is optional.
I dug out my immersion blender and in less than 30 seconds we had Mayo!!! It looked like store bought and tasted like store bought but it was much easier than running to the store.
The key is to put the ingredients in your container just as listed and then to keep your blender as still as you can for the first 10 seconds or so. Almost immediately it began to get thick and look like Mayo.
Thanks to this new recipe we won’t be using the no more Mayo excuse anytime soon! I’ll definitely be playing around with this recipe to get it just right but it worked perfectly for the potato salad.
