I love eclairs and I remember our 5th Sunday church dinners and someone would ALWAYS bring this delicious dessert along. It is so easy but everyone will LOVE you for bringing it!
Note: It tastes best if you can let it sit in the refrigerator overnight. Also, if you warm the frosting for a few seconds in the microwave it will make frosting the cake easier.
No-Bake Eclair Icebox Cake
- 2 packs graham crackers
- 2 3-oz packs instant vanilla pudding mix or use homemade vanilla pudding
- 3 c. milk
- 1 8-oz container frozen whipped topping, thawed or make your own
- 1 16-oz container chocolate frosting or make your own
Place a layer of graham crackers in the bottom of a 9×13 pan.
Prepare the pudding with the milk.
Fold the whipped topping into the pudding.
Spread half of this over the graham crackers.
Top with another layer of graham crackers, then a layer of pudding.
Top with one more layer of graham crackers.
Spread the chocolate frosting on the top.
Refrigerate for at least two hours before serving to soften the graham crackers.
