If you like chocolate and coconut then you will probably enjoy this cake… I am an undeniable chocaholic and I love coconut so this is an all-around winner for me.
My little brothers and sisters about died the very first time I made this. It was such an ugly cake the first time I tried it but the taste was pure heaven!
Mississippi Mud Cake

Ingredients:
Cake:
- 2 sticks butter, melted
- 2 T. Cocoa
- 1 t. baking powder
- 4 eggs
- 1 1/2 c. flour
- 1 c. coconut
- 2 c. sugar
- 1 t. vanilla
- 1 c. pecans or walnuts, chopped
Icing:
- 1 stick butter, melted
- 1 lb confectioner’s sugar
- 1/2 c. evaporated milk
- 1 t. vanilla
- 3 T. Cocoa
- 1 tub marshmallow creme/fluff or 1 bag mini marshmallows
Directions:
Preheat the oven to 350.
Cake:
Grease and flour a 9×13 pan.
Cream together the butter and eggs.
Combine the other ingredients and beat well.
Pour into the prepared pan and bake for 30-35 minutes.
When finished baking spread with the marshmallow creme or top with marshmallows.
Icing:
Beat together all of the icing ingredients and pour over the top of the cake.
Let cool completely before serving.
