Homemade Bread Stuffing – Updated!

I’ve updated this recipe to include for baking it separately as well as some add-ins to make it a little extra special. I can remember getting out the biggest bowls we could find to make this when I was a kid. This was always the best part of Thanksgiving for me.

What is the difference between stuffing and dressing?

Well, many times stuffing is referred to as being cooked inside the turkey… hence the name while dressing was usually cooked in a separate dish. Many people in the South refer to it as dressing no matter how you cook it.

Homemade Bread Stuffing


  • 1 1/2 c. chopped onion
  • 1 1/2 c. chopped celery
  • 1 stick butter
  • 1 t. poultry seasoning
  • 1 t. rubbed sage
  • 1 t. salt
  • dash pepper
  • 1/2 c. water or broth
  • 8 c. dried bread cubes (we usually use fresh bread)


Place the bread cubes in a large bowl.

Cook and stir the onion and celery in the butter until tender.

Add the seasonings.

Add everything to the large bowl with the bread cubes.

Toss to mix… be careful as it may be HOT!

In the bird:

Stuff and roast the turkey immediately or just place this in a greased casserole and bake at 350 for about an hour.

This should stuff a 12-14 pound turkey.

In the pan:

Preheat the oven to 400.

Grease a 9×13 baking dish.

Spread into the baking dish.

Cover with foil.

Bake for 30 minutes.

Remove the foil and bake another 15-20 minutes.


In the Crockpot:

Grease your crockpot before adding the stuffing to it.

Gently spoon the stuffing mixture into the crockpot.

Cover and cook on HIGH for 1 hour.

Reduce to LOW and continue cooking for 3 to 4 hours.


You can add in a variety of ingredients for different flavors:

  • 2 c. cooked, chopped chicken or turkey
  • giblets from the turkey, chopped and cooked with the onions and celery
  • 1/2 pound browned sausage, crumbled or 1 pound of cooked, chopped bacon
  • 1-2 c. chopped jalapenos, cooked with onions and celery. Add in 1 c. of cheddar cheese to the stuffing mixture and top with another cup of cheese before baking.
  • 10-12 shucked oysters
  • 1-2 c. smoked sausage, chopped and 1 bell pepper, chopped. Cooked with the onions and celery.
  • 2-3 c. chopped apples or pears
  • 1-2 c. chopped apples and 1 c. cranberries
  • 1 c. dried fruit
  • 1/2 c. toasted nuts
  • 1 c. chopped chestnuts from a jar
  • 2 c. sliced mushrooms cooked with the onions and celery.
  • 1-2 c. baby carrots or peeled and sliced carrots cooked with the onions and celery.
