I was in a baking kinda mood on the 4th of July and decided to make a couple of different desserts. This was one of them as it is so easy to make. I hadn’t made one in a while so I had forgotten how good they make the house smell too.
I mixed the berries up and let them sit about 30 minutes or so to blend well. I used that time to make up a Lemon Meringue Pie and a Nanny’s No Bake Coconut Cream Pie. All three of these were super easy to make and so good to eat. (I’ll update the links to those recipes when I get them posted.)
Momma’s Blackberry Cobbler
Ingredients:
- 4 c. fresh or partially thawed blackberries
- 3/4 c. sugar
- 4 T. cornstarch
- 1 T. lemon juice, optional
- 1 yellow or white cake mix
- 1 stick of butter or margarine, cut into pats
Directions:
Combine the first four ingredients in a large bowl. Cover and let sit for about 30 minutes.
Preheat oven to 350
Grease a 9 x 13 casserole dish
After 30 minutes mash the berries lightly with a potato masher or the bottom of glass, and give them a gentle stir.
Dump the blackberries into the greased casserole.
Pour the dry cake mix on top and spread evenly. (if you don’t want a lot of crust then only use 1/2.)
Place the butter pats on top of the cake mix.
Bake for 30 – 45 minutes or until slightly browned.
Let cool a bit and serve warm with a large scoop of vanilla ice cream.
