This is a dessert I’ve had a couple of times since I started square dancing. I love it… I mean it’s full of rich chocolatey goodness and layered on top of coconut and pecans… yum! Don’t plan on bringing home leftovers if you take this to a potluck though.
Earthquake Cake
Ingredients:
- 1 boxed German Chocolate Cake Mix
- 3 oz. cream cheese, softened
- 1/2 c. butter or margarine, softened
- 16 oz. powdered sugar
- 1 c. shredded coconut
- 1 c. pecans, chopped (optional)
Directions:
Preheat oven to 350.
Grease a 9 x 13 pan.
Spread the coconut and pecans evenly over the bottom of the greased pan.
Prepare the cake mix according to the directions on the box.
Pour over the pecans and coconut.
Mix the cream cheese and butter together until smooth.
Add the powdered sugar and mix well.
Drop this mixture by teaspoonfuls on top of the cake batter.
Bake for 50-60 minutes.
Enjoy hot or cold.
