Microwave Caramel Popcorn

This is a fun recipe that I learned in Home Ec. many years ago. The kids can help with this but be careful because the caramel does get really HOT so they will need lots of supervision.

Microwave Caramel Popcorn

Ingredients:

  • 1/2 c. butter or margarine
  • 1 c. packed brown sugar
  • 1 t. salt
  • 1/4 c. corn syrup
  • 1 T. baking soda
  • 3-6 qts. (12-24 cups) popped popcorn
  • 1 Large Brown Paper Grocery Bag

Directions:

Grease a large cookie sheet or two.

Place the popped popcorn into the brown bag.

Put the first four ingredients into a microwaveable bowl. Microwave on high for 3 – 5 minutes. Stir every minute. Cook caramel mixture until it starts to boil rapidly. Cook 2 more minutes.

Take out of the microwave and stir in the baking soda until it is a nice creamy color. Quickly pour the caramel mixture into the bag with the popcorn, roll down the top of the bag, and SHAKE vigorously.

Place the bag, with the top still rolled down, into the microwave. Cook for 2 1/2 minutes, remove the bag and shake. Cook for another 2 1/2 minutes, remove the bag and shake again.

Pour the popcorn onto a greased cookie sheet and carefully separate into clumps or form balls. Be careful as it will be HOT!
