This is a super delicious dish that I love to make. Sometimes I will sprinkle little extra pepper flakes on mine but I try to keep it fairly mild for the kids.
I serve this over pasta, usually a thin spaghetti or angel hair, and with a salad on the side. Whatever your favorite pasta is would be fine though.

Spicy Chicken Breast Caprese with pasta
Ingredients:
- 2-3 T. olive oil
- 6 boneless skinless chicken breast halves
- 3 T. cloves garlic, minced
- 1/3 c. onion, finely minced
- 1/2-1 t. crushed red pepper flakes
- 1 can tomato sauce
- 2 T. basil
- salt and pepper to taste
- 1/2 – 1 c. shredded cheese, mozzarella or a mozzarella blend is best
- 1 box of your favorite pasta
Directions:
Cook pasta according to directions and set aside.
Heat about 2 T. of olive oil in a large skillet over medium heat. (You will need a lid later on.)
Sprinkle the salt and pepper on the chicken and add to the skillet. Cook the chicken for 4 to 5 minutes on each side or until lightly browned; remove from skillet and set aside.
In this same skillet, heat about 2-3 teaspoons of olive oil; add garlic and onion, cook until soft.
Add the tomato sauce and red pepper. Bring to a simmer and cook on low for 10-12 minutes.
Place the chicken back in the pan.
Sprinkle the basil and the cheese and pour a little sauce over each piece of chicken.
Cover and simmer for another 10-12 minutes or until chicken is cooked through and the cheese has melted.
Serve hot over pasta.
