I love this recipe! It is good with or without the bacon or ham, and with or without the extra cheese.
Cheesey Potatoes
Ingredients:
- 8 to 10 medium potatoes
- 2 cans of cream of chicken soup or cream of mushroom soup
- 1 cup sour cream
- 2 cups grated cheddar cheese or cheddar blend
- 1 small onion, diced
- 1/4 cup butter
- 1-2 c. chopped ham or bacon, optional but so good!
- chives, optional
- extra cheese for the top, optional
Directions:
Preheat oven to 350.
Peel potatoes and boil in water until tender, approximately 15-20 minutes.
In another pan, cook onion in butter until tender.
Drain potatoes and cut into small pieces. (I usually mash them lightly with a hand masher.)
Mix potatoes, onion, butter, and ham or bacon with remaining ingredients.
Pour into greased 9×13 pan.
Top with additional cheese if desired and sprinkle with chives.
Cover with foil and bake for about 1 hour.
Take the foil off and bake for 10 minutes or place under the broiler to brown.
