Fix-It and Forget-It Crockpot Chicken

I just love crockpot meals that you can throw together in a few minutes, dump in the cooker, and walk away. I don’t remember where I found the original recipe for this but I have changed it around a little to make it work better for my family.

Fix-It and Forget-It Crockpot Chicken

Fix-It and Forget-It Crockpot Chicken

  • 2 lbs chicken breasts, whole or cut up
  • 1-1/2 lbs small red potatoes, quartered
  • 1/2 pound baby carrots
  • 1-12 oz bag of frozen veggies, optional
  • 1 onion, diced
  • 1/4 cup olive oil
  • 1/3 cup lemon juice
  • 1 teaspoon dried oregano
  • 2 teaspoons garlic, crushed
  • 1 teaspoon salt
  • black pepper, to taste

Place the chicken breasts in the crockpot. Add potatoes, carrots, onions, and other veggies, as desired.

Mix together the olive oil, lemon juice, garlic, and seasonings. Pour mixture over the chicken and vegetables.

Cover and cook on high for 4 hours or low for 8 hours.

Tip: you can brown the chicken on the stovetop before placing it in the crockpot, if you like.
