Pancake Poppers

This is a quick and easy alternative for breakfast. There are so many things you could add to these to make them a family favorite. They are also really easy for little hands that might have trouble with a regular pancake. These are great for freezer meals too!

Pancake Poppers

Ingredients:

Use the recipe for Pancakes or use your favorite pancake recipe.

Toppings:

Bacon or Sausage, cooked and crumbled
berries or other fruit
chocolate chips

Directions:

Preheat oven to 350 degrees.

Prepare the pancake batter as directed.

Spoon the batter into mini muffin tins using a small scoop or Tablespoon.

Add your toppings, pressing down lightly.

Bake at 350 degrees for 12-15 minutes.

Serve plain or with syrup or applesauce.

These can also be made ahead of time and reheated in the microwave or toaster oven.
