I had never been a big fan of black-eyed peas. When I was trying to come up with a semi-traditional New Year’s meal a few years ago I decided that they should be included as we need all the good luck we can get. Right?
Well, I can’t guarantee that these will bring you good luck but they will fill your tummy. This recipe was a big hit at our house and so easy to make. We actually eat it a few times a year just because we like it.
Black Eyed Peas
Ingredients:
- 2 cans of black-eyed peas (you can use frozen or dried but you would need to prepare them first.)
- 1 can of chicken broth
- 2-3 slices of bacon, chopped
- 1/2 onion, chopped
- 1 clove garlic, minced
- salt and pepper to taste
Directions:
Fry the bacon in a saucepan, when it is about halfway cooked add the onion and garlic. Cook until the bacon is crisp and the onion is transparent.
Carefully add the undrained peas, the chicken broth, and season to taste.
Heat thoroughly and enjoy!
Note: You can also add some smoked sausages and/or canned diced tomatoes to this to make it more of a meal. If you add another can of chicken broth it will be soupier and can be served over rice or cornbread for a hearty meal.
