This has got to be my number one favorite meatloaf recipe. We usually serve it with mashed potatoes and steamed veggies. The whole family enjoys this one and even likes to have meatloaf sandwiches if there are leftovers. Sometimes I add a pack of Lipton Onion Soup Mix to this.
Upside-Down Meatloaf
Ingredients:
- 1 c brown sugar
- 1 c ketchup
- 3 lb ground beef, ground turkey, or a mixture of ground beef and turkey/pork
- 3 1/2 c oatmeal (or 14 packs of the instant oatmeal)
- 1-1/2 c buttermilk (or add 1 T. vinegar to regular milk)
- 4 eggs
- 2 t. salt
- 1 onion, chopped
Directions:
Preheat oven to 350
Lightly grease a 13 x 9 pan or 2-5×9 inch loaf pans.
Press brown sugar into the bottom of the pan, and then spread ketchup over brown sugar.
Mix remaining ingredients and put into the pan(s) on top of brown sugar and ketchup.
Bake 45 minutes or until juices run clear.
