This is a family favorite and usually gets made once a month or so. I like to serve this with a fresh salad and some buttered bread.
Spicy Chicken and Bowties
- 1 lb bow tie pasta, cooked according to directions, drained (you can use your favorite pasta)
- 2 lb boneless skinless chicken thighs or breast, cubed
- 2 T butter or margarine
- 2 cloves garlic, crushed
- 1/4 c flour
- 1/2 c milk
- 1 c chicken broth
- 1 c. mild salsa — or spicy if your family likes it hot
- 1- 8 oz package cream cheese, cubed
Melt the butter in a large skillet over medium heat.
Add the chicken and cook 4-5 minutes until lightly browned.
Add garlic and cook until chicken is cooked through.
Stir in flour, and slowly add milk and broth, stirring constantly.
Add the salsa and cream cheese and keep stirring until hot and bubbly.
Add the cooked and drained pasta to the skillet and stir to combine.
