I’m always trying to find ways to introduce my kids to different foods, especially vegetables. My kids really love the eggplant when it is fixed this way. It does take a little bit longer than some of my other dishes so I don’t make it very often.
- Olive oil
- 1/3 c. bread crumbs (I like to use Italian)
- 1/3 c. mayo
- 2 medium-sized eggplants
Preheat oven to 350 degrees.
Line a baking sheet, or two, with foil and coat with a little oil.
Wash and peel the eggplants.
Slice into rounds about 1/2 thick.
Put the bread crumbs in a shallow dish, I like to use a pie plate.
Spread the mayo on both sides of each eggplant slice.
Dip each slice into bread crumbs to coat.
Place on an oiled baking sheet and bake for 20 minutes or until golden brown.
Turn and cook for another 20 or so to brown the other side.
