I usually have boiled eggs in the fridge and this can come together really quickly. Serve on bread or toast for a quick meal or snack.
Fried Egg Sandwich
Fry one egg per sandwich. Use your favorite condiments, salt and pepper.
Ham and cheese tacos
Spread mayo or your favorite condiment on a flour tortilla. Add ham and a slice of cheese. You can also add any other toppings you like. Roll it up and enjoy!
Peanut Butter or PB&J tacos
Spread peanut butter (and jelly, if you like) on a flour tortilla and roll it up to eat.
Scrambled Egg Sandwiches
Pretty much like it sounds. Take 1-2 eggs person and scramble them up or try this recipe for scrambled eggs. Place between 2 slices of bread or toast, use your favorite condiment and enjoy. You can also put a piece of cheese on the warm eggs.
Slice up your tomato. Place between 2 slices of bread. I add mayo, salt, and pepper to mine.
We enjoy this for a quick lunch and/or snack. Sometimes we’ll even have it as a cod dinner with a salad, hard boiled egg, and sliced peaches with cottage cheese.
My favorite is to top it with a slice of juicy tomato on a sandwich!
